makes 2 servings Ingredients: 1/2 cup (125 ml) freshly squeezed lemon juice, 2 teaspoons chili sauce, 1¼ teaspoons grated orange peel, 1 teaspoon Worcestershire sauce, 3/4 teaspoon grated lemon peel, 1/2 teaspoon sugar, 1/2 teaspoon clear honey, 1 garlic clove, peeled and minced, 10 oz 9300 g0 boneless lamb, cut into cubes Instructions: In medium mixing bowl, combine all ingredients, except lamb. Mix well. Add cubed meat and toss to coat well. Cover and refrigerate for at least 1 hour, turning lamb occasionally. Remove marinated lamb from refrigerator and transfer to rack in broiler pan, reserving marinade. Broil for 5-7 minutes. turn lamb cubes and brush with marinade, then broil for further 5-6 minutes or until done to taste.

Lamb Zingara Recipe

makes 2 servings Ingredients: 1 teaspoon vegetable oil, 1/2 cup sliced yellow onion, 1 teaspoon minced fresh garlic, 1/2 cup frozen artichoke hearts, 3/4 cup (180 ml0 chicken stock, 1/2 cup blanched, peeled, seeded and chopped tomatoes, 2 teaspoons tomato paste, 1/2 teaspoon ground fresh rosemary leaves, 2 oz (60 ml) dry vermouth, 1/2 teaspoon salt, freshly ground black pepper, 1 pound (480 g) lamb loin chops, For Garnish: 1 tablespoon chopped fresh parsley Instructions: Heat vegetable oil in a large nonstick skillet. Add onion and garlic and saute until onion slices are translucent. Add artichoke hearts, then cover and cook over medium heat for 5 minutes. Stir in chicken stock, tomatoes, tomato paste, and rosemary. Simmer, covered, stirring occasionally, for about 10 minutes. Add dry vermouth and seasoning. Cook, uncovered, over medium heat, until mixture thickens slightly. While vegetable sauce is cooking, on the rack in broiler pan, broil lamb chops 2-5 inches from heat source. Transfer broiled lamb to warm serving plate, top with vegetable sauce. Sprinkle with chopped fresh parsley and serve immediately.

Broiled Hot Honeyed Lamb Steaks Recipe

Ingredients

  • 1 tablespoon plus 1 teaspoon apricot spread
  • 1 teaspoon Dijon-style mustard
  • 1 teaspoon honey
  • 1 teaspoon teriyaki sauce
  • 1/2 garlic, peeled and finely mashed to form paste
  • 1 pound (480 g) lamb steaks

Method

Step 1

In a small mixing bowl, combine all ingredients, except lamb steaks.

Step 2

On rack in broiler pan, broil steaks 2-5 inches from heat source. Brush with half the mustard-honey mixture and broil for further 5-7 minutes. Turn steaks over and broil 1-2 minutes.

Step 3

Brush with remaining mustard-honey mixture. Broil for 5-7 minutes longer or until done to taste.

Makes 1 serving Ingredients: 5 oz (150 g) beef top or bottom round steak, 1 tablespoon vegetable oil, 1/2 cup (125 ml) canned tomatoes, chopped, 1/2 cup sliced celery, 1/2 cup sliced fresh mushrooms, 1/4 cup diced green bell pepper, 1 garlic clove, peeled and minced, 1/2 cup (125 ml) mixed vegetable juice, 2 teaspoons onion flakes, 1/8 teaspoon freshly ground black pepper, dash salt, fresh chopped parsley for garnish Instructions: Preheat the broiler. On rack in broiler pan, broil steak, turning once, until rare for about 5 minutes. While steak is broiling, heat vegetable oil in 1-quart (1L) saucepan. Add tomatoes, sliced celery, mushrooms, green bell pepper, and minced garlic. Stir well and saute, stirring occasionally, for 3 minutes. Stir in vegetable juice, onion flakes, black pepper, and salt. Bring mixture to a boil over medium-high heat. Add beef steak and spoon vegetable mixture over meat. Cover pan, then reduce heat to low and simmer until beef is tender, for about 45 minutes. Beef Steak with Mushrooms

Makes 4 servings Ingredients: 3/4 cup (180 ml) chicken stock, 2 tablespoons plus 2 teaspoons dry sherry, 2 teaspoons arrowroot, dissolved in 1 tablespoon water, 1 tablespoon plus 1 teaspoon vegetable oil, 4 garlic cloves, peeled and smashed, 4 slices pared ginger, 1 cup sliced fresh mushrooms, 1 cup green bell peppers, striped, 1/2 cup sliced yellow onions, 1/2 cup (125 ml) canned water chestnuts, 1 pound (480 g) broiled flank steak, thinly sliced diagonally across the grain Instructions: In a small mixing bowl, chicken stock, sherry, and dissolved arrowroot. Stir well and set aside. Heat vegetable oil in a large nonstick skillet. Add smashed garlic and sliced ginger and saute, stirring, until lightly browned. remove and discard garlic pieces and ginger slices. To the same skillet, add mushrooms, green bell pepper strips, onion, and water chestnuts. Cook, stirring quickly and frequently, until tender-crisp, for about 3 minutes. Stirring constantly, add reserved stock mixture to skillet and cook until thickened. Add beef steak and cook until thoroughly heated. Serve hot.

Ingredients

Makes 2 servings Ingredients: For Pastry Dough: 1/3 cup all-purpose flour, 2 teaspoons margarine, 2 tablespoons unflavored yogurt, dash salt  For Chicken: For Chicken: 3/4 pound (360 g) skinless and boneless chicken breasts, skin reserved, dash salt and freshly ground black pepper For Filling: 1 teaspoon margarine, 3/4 cup finely chopped fresh mushrooms, 1 tablespoon finely chopped scallion, 1/4 teaspoon salt, 1/4 cup (60 ml) dry white wine, 1/4 teaspoon Dijon-style mustard Instructions: to Prepare Pastry Dough: In a mixing bowl, combine all-purpose flour and salt. Using a pastry blender, cut in margarine until mixture resembles coarse meal. Add yogurt and mix thoroughly. Form yogurt mixture into a ball. Wrap with a plastic wrap and refrigerate for at least 1 hour. To Prepare Chicken: Fold chicken breasts together, shaping them into one oblong; if necessary, tie with colorfast or undyed cotton string to hold shape. Season to taste with salt and black pepper. Cover with reserved skin and place in nonstick baking pan. Preheat the oven to 350º F (175º C). Bake in the preheated oven for about 25 minutes. Remove baked chicken breasts from the oven and allow to cool slightly. Discard the skin, then cover chicken and chill. To Prepare Filling: In a small nonstick skillet heat margarine over medium-high heat until bubbly. Stir in mushrooms, scallions, and salt. Saute, stirring occasionally, until all liquid is evaporated, for about 5 minutes. Pour in wine and cook until vegetables resemble a smooth paste, for further 3 minutes. Stir in mustard. Remove mixture from the heat and allow to cool slightly, then cover and refrigerate. To Prepare Chicken Breast en Croute: Roll pastry dough between 2 sheets of wax paper to about 1/8-inch thickness, forming a circle large enough to enclose chicken breast. Spread center of pastry with the chilled mushroom mixture, then top with chilled chicken, flat side up. Fold pastry dough over chicken to enclose and pinch edges to seal well. Turn stuffed pastry over and place in a nonstick baking pan that has been sprayed with nonstick cooking spray. Preheat the oven to 375º F (180º c). Bake in the preheated oven for 35-40 minutes or until golden.

Easy Chicken Pot Pie Casserole Recipe

Ingredients

  • For Pastry Dough: please see recipe above
  • For Pie Filling: 3/4 cup (180 ml) chicken broth
  • 2 teaspoons all-purpose flour
  • 1 cup carrots, cooked and sliced
  • 1/2 cup frozen peas, thawed and drained
  • 1 tablespoon chopped fresh scallion
  • 1/2 pound (240 g) skinless and boneless cooked chicken, cubed
  • dash salt, freshly ground black pepper, and fresh thyme

Method

Step 1

To prepare Filling: In 1-quart (1 L) saucepan, combine chicken broth and flour. Stir well until flour is dissolved. Bring chicken broth mixture to boil over medium-high heat, then stir in carrots, peas, and chopped scallion. Cook, stirring occasionally, for 5 minutes. Add cubed chicken and seasoning. Cook for further 5 minutes.

Step 2

To Prepare Pot Pie: Divide chicken mixture into 2 shallow casseroles. Heat the oven to 400 F (200 C).

Step 3

Cut chilled pastry dough in half. Roll each half between 2 sheets of wax paper into a piece large enough to cover 1 pot pie. Cover each pie with dough, pressing dough against inside edges of casserole. Pierce with a fork to let steam escape. Bake in preheated oven until lightly browned, for about 30 minutes.

Makes 2 servings Ingredients:  1 pound (480 g) skinless chicken parts (drumsticks and thighs), 1/2 banana, peeled and cut into thick slices, 1/4 teaspoon salt, 1/3 cup (80 ml) unfermented apple cider, 1/2 cup (125 ml) applesauce (no sugar added), 1/4 cup (60 ml) plain unflavored yogurt, dash of ground nutmeg Instructions: Preheat the oven to 350º F (175º C). In a shallow 1½ -quart (1½ L) ovenproof casserole, combine chicken parts and banana. Sprinkle with salt and drizzle with apple cider vinegar. Cover and bake in preheated oven for about 35 minutes or until chicken parts are tender. Transfer pan juices and banana slices to a food processor, leaving the chicken in casserole. Add applesauce, yogurt, and ground nutmeg to banana mixture. Process until smooth. Pour banana mixture over chicken. Cover and broil until chicken parts are golden brown.

Oven Baked Yogurt-Glazed Chicken Recipe

makes 4 servings Ingredients: 1½ pounds (720 g) skinless and boneless chicken, thinly sliced, 2 tablespoons teriyaki sauce, 1/8 teaspoon freshly grated ginger, 1 tablespoon plus 1 teaspoon vegetable oil, 1 teaspoon minced fresh garlic, 2 cups sliced mushrooms, 1 tablespoon plus 1 teaspoon cornstarch, 3/4 cup (180 ml) homemade chicken stock, 2 cups frozen broccoli florets, thawed and drained, blanched, 2 cups slivered carrots, blanched, 1/2 cup chopped fresh scallions Instructions: In a medium bowl, combine chicken, teriyaki sauce, and grated ginger. Stir well and set aside. In a large nonstick skillet, heat vegetable oil over medium-high heat. Add minced garlic and saute briefly (do not brown). Stir in mushrooms and saute, stirring, until they are tender. Stir in chicken mixture and cook, stirring and turning, until chicken is tender, for about 5 minutes. In a small mixing bowl, combine cornstarch and chicken stock. Stir until cornstarch has dissolved. Pour cornstarch mixture over chicken. Cook, uncovered, over medium heat, stirring constantly, until thickened. Stir in broccoli and carrots. Toss gently until heated through. Season to taste with salt and black pepper, then stir again. Makes 2 servings Ingredients: 12 oz (360 g) skinless and boneless chicken breasts, cut into strips, 1 tablespoon plus 1 teaspoon soy sauce, 1 tablespoon plus 1 teaspoon dry sherry, 2 teaspoon arrowroot, 3/4 cup (180 ml) chicken broth, 2 teaspoons vegetable oil, 1/4 cup sliced yellow onion, 2 teaspoons minced ginger, 1 garlic clove, peeled and minced, 1 cup sliced celery, 1/4 cup sliced water chestnuts Instructions: In a small mixing bowl, combine striped chicken, soy sauce, and sherry. Toss well. Cover and refrigerate for at least 1 hour. In another small mixing bowl, combine arrowroot and chicken broth. Stir until arrowroot is completely dissolved. Set aside. In a large nonstick skillet, heat vegetable oil over medium-high heat. Add chicken and saute until well cooked, for about 3 minutes. Using a slotted spoon, remove cooked chicken from the skillet and transfer to large plate. Set aside. using the same skillet, saute, stirring, chopped yellow onion, ginger, and garlic until onion is translucent. Stir in celery and water chestnuts and saute until tender-crisp. Ingredients

  • 1/2 pound (240 g) uncooked Chinese noodles
  • 1/2 cup (125 ml) reduced sodium fat free chicken broth
  • 2 tablespoons granulated sugar
  • 1/2 cup (125 ml) soy sauce
  • 1 large carrot, peeled and sliced
  • 2 tablespoons vegetable oil
  • 1 pound (480 g) boneless and skinless chicken breasts, cut into strips
  • 1/2 pound (240 g) sliced shiitake mushrooms
  • 1 cup sliced fresh celery
  • 4 green onions, sliced
  • 8 oz (240 ml) can sliced water chestnuts
  • 4 oz (120 g) bean sprouts
  • 1/2 pound (240 g) baby bok choy

Method

Step 1

Cook Chinese noodles, according to a packing instruction. Drain, using a colander, set aside and keep warm.

Step 2

In a small sauce pan, combine chicken broth, suagr,and soy sauce. Mix well, then heat through and set aside.

Step 3

In a wok, heat vegetable oil over medium-high heat. Add chicken strips and stir-fry until golden.

Step 4

Pour half of chicken broth mixture over cooked chicken. Push chicken to side of wok.

Step 5

Add carrot, mushrooms, onions, and celry. Cook, stirring, over medium-high heat for furhter 1 minute.

Step 6

Stir cooked vegetables into chicken, then toss well. Stir in water chestnuts and bean sprouts. Pour remaining chicken broth mixture over cooked vegetables.

Step 7

Cook, stirring, for additional 2-3 minutes. Stir in baby bok choy and cook for furtner 1 minute.

Step 8

Serve over cooked Chinese noodles. Enjoy!

Easy homemade pizza dough recipe.  Easy to prepare, yeast-based, a basic dough pizza recipe. Pizza is not too difficult to make. But it requires a bit of preparation time because the dough is yeast-based and must be set aside to rise. Even though pizza cannot be made on the spur of the moment, so much of the work can be done ahead, that it does work well for any party. You can make the dough ahead so that all you need do at the last minute is assemble the pizza.

If the Dough Becomes Too Hard to Work

Let the dough sit for a few minutes. This allows the glue that you have developed be kneading to relax. it should then be easier to work.

If You Have Added Too Much Flour and the Dough is Stiff and Dry

Brush the flour on your surface aside, spread the surface lightly with olive oil, and continue to knead. Wash out the bowl in which you made the dough, and pour in olive oil. Put in the dough and roll it around so that it is oiled all over. Cover loosely with plastic wrap or a clean cloth. Allow rising in a warm place for 2-3 hours until dough has doubled in bulk. Punch down the dough and proceed with the pizza.

To Freeze Pizza Dough

The dough may be frozen at this point. Punch it down, then wrap well in plastic wrap, and place in plastic bag.

To Thaw the Dough

Remove the dough from the freezer. Loosen the outer plastic bag, and allow to thaw at room temperature for 8 hours.

Easy Homemade Pizza Dough Recipe

Ingredients

  • 1 ½ cups (375 ml) lukewarm water
  • 1/2 teaspoon granulated sugar
  • 1½ teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 1/4 cup (60 ml) plus 2 tablespoons olive oil
  • 1/2 cup semolina flour
  • 3 cups unbleached white flour

Method

Step 1

In a large mixing bowl, combine lukewarm water and sugar. Stir until sugar is dissolved.

Step 2

Sprinkle the yeast on top of the water. The yeast will dissolve and bubble to the surface, for about 5-10 minutes.

Step 3

Makes 4-6 servings Ingredients: 2 tablespoons olive oil, 3 pounds (1.44 kg) bone-in and skin-on chicken thighs, trimmed, 1 teaspoon cumin seeds, 1 medium red onion, peeled and chopped, 3 tablespoons candied ginger, 1 teaspoon minced garlic, 1 pound (480 g) baby carrots, halved lengthwise, 1 cup (250 ml) canned crushed tomatoes, undrained, 4½ oz (135 ml) can chopped mild green chiles, 1/2 cup (125 ml) chicken stock or broth Instructions: In a 6-quart (6 L) pressure cooker, heat olive oil over medium heat. Working in batches, brown chicken thighs, skin side down, turning once, for about 6 minutes. Remove from the pot and transfer to a large bowl. Add the cumin seeds to the pot and toast, stirring, for 30 seconds. Stir in chopped red onion, caramelized ginger, and garlic. Cook, stirring often, until aromatic for further 2 minutes. Return chicken thighs with any accumulated juices to pressure cooker. Close cooker and lock the lid. set burner heat to high pressure. when pressure cooker reaches high pressure, reduce heat to low. Ingredients

  • 2 tablespoon peanut oil
  • 3 pounds (1.44 kg) bone-in and skin-on chicken thighs, trimmed
  • 6 scallions, grren and white parts, thinly sliced
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon minced garlic
  • 3/4 cup (180 ml) chicken broth
  • 1/4 cup (60 ml) mirin
  • 1/4 cup (60 ml) soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toated sesame oil

Method

Step 1

In a 6-quart (6 L) pressure cooker, heat peanut oil over medium heat. Working in batches, brown chicken thighs lightly, turning once, for about 3 minutes. Remove browned chicken from the pot and transfer to a large bowl.

Step 2

Add the scallions, ginger, and garlic to the pot. Cook, stirring, until scallions softened, for about 2 minutes.

Step 3

Pour in chicken broth, mirin, and soy sauce. Stir well. Return chicken thighs and any accumulated juices to the pot, turning chicken to coat in the sauce.

Step 4

Close pressure cooker and lock the lid. Set butner heat to high pressure. When cooker reaches high pressure, reduce heat to low. Ser timer to cook for 12-15 minutes.

Step 5

Open pressure cooker, using a Quick Release Method. Drizzle rice vinegar and sesame oil over the top of baked chicken thighs. Serve hot.

Makes 12 stuffed eggs Ingredients: 6 large eggs, hard-cooked, 3 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1/4 teaspoon each: paprika, salt, dash of freshly ground black pepper, 1/2 cup (125 ml) canned tuna, preferably packed in olive oil, finely chopped, 3 green onions, white parts only, finely chopped, 2 teaspoons canned capers, drained and minced, hot pepper sauce, sweet paprika Instructions: Peel hard-cooked eggs and rinse under cold running water.
