Mussels au gratin. Mussels with breadcrumbs, spices, and Parmesan cheese baked in an oven. Very delicious French recipe. You may also like Cheese Baked Green Mussels, another easy and tasty seafood recipe baked in an oven.

Mussels au Gratin

Ingredients

  • 2¼ pounds (1 kg) fresh mussels
  • 1 cup finely chopped parsley
  • 8 tablespoons olive oil
  • 2 cups breadcrumbs
  • 1/2 red chili. deseeded and chopped
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 garlic clove, peeled and chopped
  • salt and freshly ground black pepper

Method

Step 1

Preheat the oven to 400° F (197° C).

Step 2

Scrub the mussels, using small metal brush and wash under cold running water. Put washed mussels into a large pan and cover with water. Cover with a lid and boil over high heat. Cook until the mussels open.

Step 3

Drain, reserving 1 cup of cooking water. Remove the empty halves of the shells and place the halves containing the mussels on a baking tray.

Step 4

Preheat 3 tablespoons of olive oil in a frying pan. Add bread crumbs and fry, stirring, until golden brown.

Step 5

In mixing bowl, combine chopped parsley, chili, breadcrumbs, Parmesan cheese, garlic, the remaining 5 tablespoons of olive oil, and 2 tablespoons of reserving mussel water. Season with salt and freshly ground black pepper.

Step 6

Place a little of cheese mixture on top of each mussel and press down slightly. Put the baking tray into preheated oven and bake for 2-3 minutes, until the gratin topping is nicely browned.
