- 4 turkey breast cutlets
- 1/4 tablespoon freshly ground black pepper
- 1 teaspoon dried sage,crumbled
- 1 tablespoon unsalted margarine
- 1 tablespoon olive oil
- 1/3 cup (80 ml) dry white wine
Sprinkle the turkey cutlets with the pepper and sage.
Melt the margarine with the olive oil in a heavy 10-inch skillet over moderate heat. Brown the turkey slices in 2 batches,about 3 min. on each side;transfer to a heated platter and keep warm.
Add the wine to the skillet,raise the heat to the high,and boil down slightly for 1-2 min,stirring constantly. Spoon the sauce over turkey slices and serve with rice and green peas.
