Cold melon soup recipe.Very tasty soup.An excellent choice for hot summer evening.There are to many variations of this vegetable summer soup.Please check out one of them,adapted from http://www.eatingwell.com
Cucumber Melon Soup
Ingredients:1/2 cup diced seedless cucumber,6 tablespoons freshly squeezed lime juice,divided,plus more to taste,
1 tablespoon thinly sliced green scallion,plus 1 whole scallion,chopped,divided,1 jalapeno pepper,seeded and chopped,plus more to taste,1 cup (250 ml) cold water,
1 strip orange zest,1/2 cup (125 ml) freshly squeezed orange juice,plus more to taste,1 teaspoon chopped fresh ginger,1/2 teaspoon kosher salt,2 tablespoons finely chopped cilantro and 6 teaspoons plain yogurt
Dice enough melon to measure 1 cup (250 ml). In a small mixing bowl,combine diced melon,cucumber,2 tablespoons lime juice and sliced green scallions.Mix well.
Cover melon mixture and refrigerate until ready to serve.
In a blender,combine remaining melon and 4 tablespoons lime juice.
Add chopped whole scallion,jalapeno pepper,water,orange zest,orange juice,chopped ginger and salt.
Blend until smooth and creamy.Refrigerate cucumber melon soup until chilled.
Stir in chilled melon mixture .Divide among 4 soup bowls.
Pour vegetarian soup into bowls.Garnish with chopped fresh cilantro and plain yogurt.
Cold Melon Soup Recipe
- 2 cups cantaloup chunks
- 1 tablespoon thawed frozen concentrated orange juice (no sugar added)
- 1 teaspoon lemon-limeflavored sugar-free drink mix
In blender,combine all ingredients. Process on high speed until drink mix is dissolved.
Transfer to serving bowl/cover and refrigerate until chilled. Enjoy your soup.
