Chicken and Macaroni Salad with Olives

makes 4 servings

Ingredients: 3 cups cooked, rinsed, and drained elbow macaroni, 2 cups cooked chicken, diced, 2 hard-cooked eggs, shelled and chopped, 1/4 cup chopped dill pickles, 3 tablespoons sliced green olives, For Dressing: 1/3 cup (80 ml) olive liquid, 1/3 cup (80 ml) mayonnaise, 1/3 cup (80 ml) plain low-fat yogurt, 1 tablespoon fresh dill weed, onion salt, freshly ground black pepper

Instructions: In a large mixing bowl, combine macaroni, cooked and diced chicken, chopped eggs, pickles, and olives. Mix well and set aside. In a covered jar, combine all dressing ingredients. Shake well. Pour dressing mixture over macaroni mixture. Toss. Cover and refrigerate until ready to serve.

Tuna Macaroni Nicoise Salad Recipe

Makes 3 servings

Ingredients: 7 oz (210 ml) can water-packed white meat tuna, undrained, 1½ cups cold cooked small pasta shells, rinsed, half of small red onion, peeled and sliced into rings, minced fresh oregano leaves, 1 tablespoon minced fresh parsley, 1 teaspoon minced fresh thyme, 9-10 pitted rive olives, sliced, 1 tablespoon olive liquid, 1 tablespoon salad oil, 1 tablespoon freshly squeezed lemon juice, 1 large vine-ripened tomato, 1/2 pound (240 g) fresh raw green beans, salt and freshly ground black pepper

Instructions: In a large salad bowl, flake undrained tuna. Add remaining ingredients, except tomato and green beans. cover and refrigerate. Just before serving, peel and dice tomato, diagonally slice green beans and stir into macaroni salad. Season to taste with salt and black pepper.

Easy Macaroni Salad Recipe


  • 2 cups uncooked elbow macaroni
  • 2 ribs celery, chopped
  • 1 yellow onion, peeled and chopped
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh chopped parsley
  • 1/2 cup shredded carrots
  • salt and freshly ground black pepper


Step 1

Cook the macaroni in 2 quarters of salted boiling water for 15 minutes or until tender. Rinse under cold running water.

Step 2

Combine macaroni, celery, and onion. Stir in mayonnaise, yogurt, carrots, and parsley.

Step 3

Salt and pepper to taste. Sprinkle with paprika. Chill well before serving.
