Easy Sesame asparagus mayonnaise recipe. Creamy mayonnaise for raw or baked asparagus. Very easy and tasty. Asparagus makes a natural, edible paintbrush. Serve tender spears alongside your soft-cooked breakfast egg. Dunk asparagus into the yolk, then stir and eat.
Here is a trio of my favorite mayonnaises, light enough not to disguise the wonder of this long vegetable. Arrange asparagus tips for dipping upright in a small basket, as if they had just arrived from the market. As a first course, serve 4-6 stalks on a small plate; lightly drizzle 3-4 tablespoons of dressing across the center of the asparagus and sprinkle with chopped fresh parsley or other appropriate garnish.

Mayonnaise Nicoise Recipe
1¼ cups (310 ml)
Ingredients: 1 cup homemade mayonnaise, 1 tablespoon capers, drained, plus extra to taste, 1 tablespoon tomato paste, 1 tablespoon anchovy paste, 1 garlic clove, peeled and minced, pinch of fresh oregano
Instructions: In a food processor, combine all ingredients. Process until smooth, then stir in remaining capers to taste.
Green Herb Mayonnaise Recipe
4 cups (2 L)
Ingredients: 1/2 bunch each: fresh Italian parsley, fresh dill, and watercress, 3/4 cup drained, cooked fresh spinach, all liquid squeezed out, 2 scallions (green onions), tender greens included, thinly sliced, 2 cups homemade mayonnaise, 1 cup (250 ml) sour cream, salt and freshly ground black pepper
Instructions: In a food processor fitted with a steel blade, combine parsley, dill, and watercress. Chop fine and transfer to a bowl. Process cooked spinach in the same way and stir into herb mixture. In a mixing bowl, combine herb mixture with scallions, mayonnaise, and sour cream, folding together gently. Season to taste with salt and black pepper. Cover and refrigerate until ready to use.

Easy Sesame Asparagus Mayonnaise Recipe
- 1 whole egg yolk
- 2 egg yolks
- 2½ tablespoons rice vinegar
- 2½ tablespoons Oriental soy sauce
- 3 tablespoons prepared Dijon-style mustard
- 1/4 cup (60 ml) dark Oriental sesame oil
- 2½ cups (625 ml) corn oil
- Szechuan-style hot and spicy oil
In a food processor fitted with a steel blade, combine beaten egg, egg yolks, vinegar, soy sauce, and mustard. Process until smooth.
With the motor still running, dribble in the sesame oil and then the corn oil in a slow, steady stream. Season with drops of the hot and spicy oil and scrape the mayonnaise into a bowl.
Cover and refrigerate until ready to use.
