Macaroni salad.Cooked macaroni with vegetables.Very easy and healthy.
- 2 cups uncooked elbow macaroni
- 2 ribs celery,chopped
- 1 yellow onion,peeled and chopped
- 2 tablespoons mayonnaise
- 2 tablespoons fresh chopped parsley
- 1/2 cup shredded carrots
- salt and freshly ground black pepper
Cook the macaroni in 2 quarters of salted boiling water for 15 minutes or until tender. Rinse under cold running water.
Combine macaroni,celery and onion. Stir in mayonnaise,yogurt,carrots and parsley.
Salt and pepper to taste.Sprinkle with paprika. Chill well before serving.
