Mussels au Gratin

Mussels au gratin.Mussels with breadcrumbs,spices and Parmesan cheese baked in oven.Very delicious French recipe.

Ingredients

  • 2¼ pounds (1 kg) fresh mussels
  • 1 cup finely chopped parsley
  • 8 tablespoons olive oil
  • 2 cups bread crumbs
  • 1/2 red chili.deseeded and chopped
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 garlic clove,peeled and chopped
  • salt and freshly ground black pepper

Method

Step 1

Preheat the oven to 400°F (197°C).

Step 2

Scrub the mussels,using small metal brush and wash under cold running water. Put washed mussels into a large pan and cover with water. Cover with a lid and boil over high heat. Cook until the mussels open.

Step 3

Drain,reserving 1 cup of cooking water. Remove the empty halves of the shells and place the halves containing the mussels on a baking tray.

Step 4

Preheat 3 tablespoons of olive oil in a frying pan. Add bread crumbs and fry,stirring,until golden brown.

Step 5

In mixing bowl,combine chopped parsley,chili,bread crumbs,Parmesan cheese,garlic,the remaining 5 tablespoons of olive oil and 2 tablespoons of reserving mussel water. Season with salt and freshly ground black pepper.

Step 6

Place a little of cheese mixture on top of each mussel and press down slightly. Put the baking tray into preheated oven and bake for 2-3 minutes,until the gratin topping is nicely browned.
