- 3 carrots,grated
- 1 cup sugar
- 11 oz (330 ml) water
- 2½ oz(75 g) dates,chopped
- 3 oz (90 g) raisins
- 4 oz (120 g) butter
- 2 teaspoons cinnamon
- 1 teaspoon ground coriander
- 1 pound (480 g) self-raising flour
- 2½ oz(75 g) chopped nuts
- 1 teaspoon baking powder
- zest of 1/2 a lemon
In a large saucepan,combine the carrots,sugar,water and dried fruit. Boil for about 2-3 minutes.
Add the butter,cinnamon and ground coriander. Remove from the heat and allow to cool completely(very important step!)
Once completely cooled add the flour and baking powder. Add the nuts,lemon zest and mix well.
Set turbo oven temperature to 356°F(180°C).
Place the cake mixture into a lined cake tin. Arrange on the low rack of halogen oven. Bake for 30 minutes.
Reduce the temperature to 300°F(150°C) and bake for additional 30 minutes. Turn out oven baked fruity carrot cake onto cooling rack. Serve as is or top with icing.
