Oven baked lemon souffle recipe. Very easy and tasty dessert baked in oven. Souffle is very popular French dessert. There are many variations of this dessert recipe,such as vanilla souffle,chocolate souffle,souffle Rothschild,Grand Marnie souffle.
The most popular souffle is vanilla Souffle.To make this recipe you need ti use the following ingredients:
1/4 cup unsalted butter
2/3 cup granulated sugar
1 vanilla bean
1 cup (250 ml) plus 2 tablespoons milk
1/3 cup all-purpose flour
4 egg yolks
5 egg whites
Butter inside of 6-inch (15 cm) souffle dish with 1 tablespoon butter.Lightly dust with 1 tablespoon sugar.
Cut a band of wax paper about 7 inches (18 cm) wide and long enough to go round the outside of the dish with 2-inch (5 cm) overlap.
Fold the paper in half lengthwise,butter the top half of one side,and tie round the souffle dish with string .In a small saucepan,combine vanilla bean and milk.Bring just below the boiling point.Discard the bean.
Melt remaining butter in saucepan,then add all-purpose flour.Cook over gentle heat for 30 seconds.Add milk and stirring,bring mixture to a boil.Reduce heat to low and simmer for 5 seconds.
Remove milk mixture from the heat.Stir in 6 tablespoons sugar.Add the egg yolks,one at a time,beating well after each addition.Beat the egg whites very stiffly until firm peaks formed.
Fold 2 tablespoons egg white into the egg mixture to soften it,them fold in the remaining whites lightly.
Preheat oven to 350º F (175ºC). Bake in the center of oven for 25 minutes.Sprinkle the top of souffle with remaining sugar and continue cooking for a further 5 minutes.
Remove baked souffle from the oven.Serve immediately.

- 4 egg yolks

- 2 lemons
- 1/2 cup chopped toasted almonds
Make souffle as shows above,adding the grated lemon zest,lemon juice and toasted almonds,instead vanilla.
Bake in preheated oven (350 F) for 25-30 minutes) Serve hot.
