  • 2 tablespoons olive oil
  • 1 medium yellow onion, peeled and chopped
  • 1 tablespoon minced garlic
  • 28 oz (840 ml) can diced tomatoes
  • 16 large pitted black olives
  • 2 tablespoons freshly squeezed lime juice
  • 2 fresh rosemary sprigs
  • 2 fresh oregano sprigs
  • 2 pound (960 g) skinless halibut fillets

Method

Step 1

Heat the olive oil in an electric instant pot turned to saute mode. Add chopped yellow onion and cook, stirring, until translucent, for about 3 minutes. Add garlic and cook, stirring, for a further 1 minute or less. Stir in tomatoes, olives, and lime juice. Top with herb sprigs.
