Ingredients

  • 3 tablespoons unsalted butter
  • 4 boneless and skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup (125 ml) freshly squeezed orange juice
  • 1/2 cup (125 ml) dry white wine
  • fresh rosemary sprig
  • 1 tablespoon honey
  • 1/2 tablespoon cornstach
  • sesame seeds

Method

Step 1

Melt the butter in an electric pressure cooker turned to the sauté mode Season chicken breasts with salt and black pepper. Add 2 seasoned chicken breasts, to the pressure cooker. Brown on both sides, turning once, for about 5 minutes. Using tongs, transfer the cooked chicken to a large bowl. Brown the remaining chicken and leave them in the cooker.

Step 2

Return the first two breasts to the pressure cooker. Pour orange juice and dry white wine over the chicken, the add sesame seeds and stir well. Add rosemary sprig. Drizzle everything with honey.

Step 3

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 20 minutes.

Step 4

Open the pressure cooker, using the Quick Release method. Discard rosemary sprig. Using tongs, transfer cooked chicken breasts to a serving platter. Reserve cooking liquid.

Step 5

In a small mixing bowl, combine cornstarch and 1/2 tablespoon of cold water. Mix until the cornstarch is completely dissolved.

Step 6

Add the cornstarch mixture to the reserved cooking liquid in the pressure cooker. Cook over medium heat, stirring, until thickened.

Step 7

Pour sauce over chicken breasts. Serve hot.
