Pressure cooker spicy steamed clams. Clams with dry white wine,spices and vegetables cooked in pressure cooker. Serve with delicious pressure cooker spicy steamed clams with dry white wine,if desired.
- 1 cup (250 ml) chicken broth
- 1/2 cup (125 ml) dry white wine
- 3 tablespoons unsalted butter,cut into small bites
- 2 tablespoons tomato paste
- 2 teaspoons minced garlic
- 1/2 teaspoon red pepper flakes
- 28 clams,scrubbed
- 1/4 cup fresh parsley leaves,chopped
In a pressure cooker,combine chicken broth,dry white wine,butter,tomato paste,garlic and red pepper flakes. Mix well. Cook over medium heat until tomato paste dissolved. Bring tomato mixture to a simmer,stirring occasionally. Stir in clams.
Close pressure cooker and lock the lid. Set burner heat to high pressure. When cooker reaches high pressure,reduce heat to low. Set timer to cook for 4 minutes.
Open pressure cooker,using Quick release method. Stir in chopped fresh parsley. Discard any unopened clams. Transfer cooked clams with accumulated juices to serving bowl. Serve hot.
