- 24 raw shrimp,cut lengthwise into 2 halves
- 5 oz (150 ml) yogurt
- 3 tablespoons Indian curry paste
- 4 sprigs of mint,rinsed,divided into leaves
- 1 cut into small pieces
In a large mixing bowl,combine yogurt with curry paste. Mix well and set aside.
Place shrimp cut up on a large platter. Brush with curry mixture and refrigerate for 4-5 hours.
Fry the shrimp on the grill for 2 minutes on each side. Serve with mint sauce.
To make Mint Sauce: Mash mint leaves with the pestle until the juice. In a small bowl,combine mint,cucumber and yogurt. Mix well and set aside.
