Slow cooker beef and barley stew.Beef with vegetables and barley cooked in crock pot.

Ingredients

  • 1 pound (480 g) lean cut stew beef
  • 1 large yellow onion,peeled and diced
  • 8 carrots,peeled and diced
  • 4 stalks celery,diced
  • 1½ cups (375 g) frozen green beans,thawed
  • 3/4 cup (180 g) barley
  • 1 teaspoon parsley flakes
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon minced garlic
  • 15 oz (450 g) can diced tomatoes
  • 3 cups (750 ml) beef stock
  • 2 cups (500 ml) water

Method

Step 1

In a crock pot,combine all ingredients. Stir well. Cover slow cooker and cook on low-heat setting for 6 hours.

Step 2

Serve beef and barley stew hot.
