Slow Cooker Harvest Beef Stew Recipe
makes 8 servings
Ingredients: 2 pounds (960 g) lean beef stew meat, cut into cubes, 1 cup (250 ml) low-sodium fat-free beef broth, 3 cups butternut squash, cubed, 4 medium tomatoes, chopped, 1/2 cup chopped yellow onion, 3/4 teaspoon dried marjoram, 3/4 teaspoon dried savory leaves, 3 medium zucchini, cut into cubes, salt and freshly ground black pepper, 6 cups cooked polenta
Instructions: In 6-quart slow cooker, combine all ingredients, except zucchini, seasoning, and cooked polenta. Cover the cooker and cook on low-heat setting for 6-8 hours, adding zucchini during last 45 minutes. Turn off slow cooker and open the lid. Season beef stew with salt and black pepper. Stir well. ladle beef stew to soup bowls. Serve over cooked polenta.
Slow Cooker Polenta Recipe
This wonderful side dish cooked in a slow cooker.
makes 6 servings
Ingredients: 3/4 cup yellow cornmeal, 2 cups (500 ml) water, 2 tablespoons unsalted butter, 2 oz (60 g) grated Parmesan cheese, salt and freshly ground black pepper, to taste
Instructions: In a slow cooker, combine cornmeal and water. Mix until cornmeal is dissolved. Cover the cooker and cook on high-heat setting for 1½ hours, stirring once 45 minutes. Stir in butter and grated cheese. Cover and cook for further 15 minutes. Turn off slow cooker. open the lid and season cooked polenta with salt and black pepper, to taste (polenta should be soft, but hold its shape).
Slow Cooker Blue Cheese Polenta Recipe
Make recipes as above, substituting 2 oz (60 g) crumbled blue cheese for grated Parmesan cheese.
Slow Cooker Goat Cheese Polenta Recipe
Make recipe as above, substituting 2 oz 960 g) crumbled Goat cheese for the Parmesan cheese.
Slow Cooker garlic Polenta Recipe
In a small nonstick skillet, saute 1/4 cup finelly chopped yellow onion and 4 cloves minced garlic in 1 tablespoon olive oil over medium-high heat for 2-3 minutes. Make recipe as above, stirring cooked vegetables during last 30 minutes. Omit Parmesan cheese.
Slow Cooker Beef Bean Stew Recipe
- 1 pound (480 g) lean beef round steak, cubed
- 3 cans (15 oz (450 ml) each)) rinsed and drained kidney beans
- 8 oz (240 ml) can tomato sauce
- 1 ½ cups finely chopped onions
- 2 cloves garlic, peeled and minced
- 2 tablespoons cider vinegar
- 2-3 tablespoons brown sugar
- 2-3 teaspoons chili powder
- 2 teaspoons Worcestershire sauce
- 1 cup chopped carrots
- salt and freshly ground black pepper
In a slow cooker, combine all ingredients, except seasoning. Mix well.
Cover slow cooker and cook on low-heat setting for 6-8 hours.
Remove cooked beef and bean stew from slow cooker. Transfer to a serving platter. Season to taste with salt and black pepper. Sprinkle with chopped green onions. Serve immediately.
