  • 1 can (15 oz (450 ml) black beans, rinsed and drained
  • 1 medium yellow onion, peeled and chopped
  • 3 cloves garlic, peeled and minced
  • 2 carrots, peeled and sliced
  • 2 ribs celery, sliced
  • 2 cups cubed lean smoked ham
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper flakes
  • 1/3 cup uncooked coverted long-grain rice
  • 1/3 cup chopped fresh cilantro
  • salt and freshly ground black pepper

Method

Step 1

In a 6 quart (6L) slow cooker, combine all ingredients, except uncooked rice, cilantro, and seasoning.
