Slow Cooker Chicken Cordon Bleu

Ingredients

  • 1/4 cup (60 g) all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 boneless chicken breasts, lightly pounded
  • 4 slices ham
  • 4 slices Swiss cheese
  • 2 tablespoons olive oil
  • 1/2 cup (125 ml) dry white wine
  • 1/2 cup (125 ml) chicken broth
  • 1/2 cup (125 ml) half-and-half
  • 2 tablespoons cornstarch

Method

Step 1

In resealable food storage, combine all-purpose flour, paprika, salt, and black pepper. Shake well and set aside.

Step 2

Arrange chicken breasts on a cutting board, skin-side down. Place a slice of ham and a slice of cheese on each piece. Fold chicken up to enclose filling. Secure with a toothpick.

Step 3

Place stuffed chicken breasts in a bag with flour mixture. Shake gently to coat.

Step 4

Preheat olive oil in a large nonstick skillet. Add stuffed chicken, skin-side down, and brown on all sides.

Step 5

Remove browned chicken from the skillet and transfer to the slow cooker.

Step 6

Remove the skillet from the heat and add white wine. Cook, stirring, to loosen browned bits. Pour over chicken into the slow cooker. Add chicken broth. Cover the slow cooker and cook on a low-heat setting for 2 hours.

In a mixing bowl, combine half-and-half and cornstarch. Add to the cooking liquid. Cover the slow cooker and cook on a low-heat setting for a further 15 minutes or until the sauce has thickened.

Remove toothpicks from stuffed chicken. Spoon sauce around the chicken. Serve with extra sauce on the side.
