Ingredients

  • 1 tablespoon cooking oil
  • 1 large onion, peeled and diced
  • 2 cloves garlic, peeled and chopped
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon fennel seeds, crushed
  • 6 cups (1.5 L) homemade chicken broth
  • 1 pound (480 g) boneless, skinless chicken breasts
  • 28 oz (840g) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 6 oz (180 g) Italian pasta
  • 1/2 cup (125 g) freshly grated Parmesan cheese
  • 1 handful fresh basil, chopped
  • salt and freshly ground black pepper to taste

Method

Step 1

In a slow cooker, combine all ingredients, except pasta, Parmesan cheese, and basil. Cover the slow cooker and cook on low-heat setting for 6-10 hours, or on high for 2-4 hours.

Step 2

Remove cooked chicken breasts from the slow cooker and shred them. Return to the slow cooker, then add pasta and Parmesan cheese. Cook for a further 10 minutes, or until pasta is cooked al-dente.

Step 3

Sprinkle with freshly chopped basil and serve.
