Slow cooker marble pound cake recipe. Very easy dessert cooked in a slow cooker and served with homemade chocolate glaze. This tasty and tender cake can be dusted with powdered  (caster) sugar and cocoa.

Use a 6-quart (6L) slow cooker for this dessert recipe.

To prepare Chocolate Glaze you need to use the following ingredients:

¾ cup powdered sugar

2 tablespoons unsweetened cocoa

1/2 teaspoon vanilla

In a mixing bowl, combine all ingredients. Mix well to make a glaze consistency.
Variation of marble pound cake-make recipe as below, omitting chocolate and vanilla and adding 1 teaspoon orange extract.

Pierce the top of the warm cake at 1-inch (2.5 cm) intervals, using a long-tined fork. Spoon Orange Syrup over the cake.

To make Orange Syrup, you need to use the following ingredients:

¾ cup powdered (caster) sugar

½ (125 ml) freshly squeezed orange juice

In a small saucepan, combine sugar and orange juice. Bring mixture to a boil over high heat, stirring until sugar is dissolved.

Remove from the heat and cool slightly.

Ingredients

  • 3/4 cup (180 ml) low-fat buttermilk
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 6 tablespoons unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, beaten
  • 1 ½ cups cake flour
  • 1/8 teaspoon salt
  • 1 ½ oz (45 g) semisweet chocolate, melted
  • Chocolate Glaze (see recipe above)

Method

Step 1

In a mixing bowl, combine buttermilk, vanilla, and baking soda. Mix well and set aside for a few minutes.

Step 2

Meanwhile, in a large bowl, combine unsalted butter and sugar. Beat until fluffy. Stir in beaten egg, blending well.

Step 3

Mix in combined flour and salt alternately with buttermilk mixture, beginning and ending with flour mixture. Reserve 1 ½ cups batter. Stir melted semisweet chocolate into the remaining batter.

Step 4

Spoon batters alternately into greased and floured loaf pan. Swirl with a knife.

Step 5

Place a loaf pan on a rack in the slow cooker. Cook on high heat setting for 4-4 ½ hours, or until a toothpick inserted in the center of the cake comes out clean.

Step 6

Turn off the slow cooker. Remove pan and cool on a wire rack for 10 minutes, then invert onto rack and cool completely. Drizzle with Chocolate Glaze and serve.
