Ingredients

  • 1 ½ pounds (760 g) pork tenderloin
  • 3/4 cup chopped yellow onion
  • 1 cup fresh cranberries
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 cup brown sugar
  • 1 cup (250 ml) orange juice
  • 3 tablespoons all-purpose flour
  • 2 tablespoons cold water

Method

Step 1

Lightly grease inside of the slow cooker with cooking spray.

Step 2

Combine all ingredients, except water and flour, in the slow cooker. Mix well.

Step 3

Cover the pot and cook on a low heat setting for 6-7 hours.

Step 4

In a mixing bowl, combine flour and water. Mix until smooth. Add the flour mixture to the slow cooker and stir well.

Step 5

Cover and cook until the mixture thickens. Serve cranberry pork with cooked rice.
