Slow Cooker Turkey Stock Recipe
This is the perfect ending for a Thanksgiving turkey.
makes 4 quarts (4 L)
Ingredients: 4 quarts (4 L) water, 1 cup (250 ml) dry white wine, 1 turkey carcass, cut up, 2 thickly sliced medium yellow onions, 2 leeks, thickly sliced (white parts only) 4 medium carrots, peeled and thickly sliced, 4 ribs celery, sliced, 1 teaspoon dried thyme leaves, 10 black peppercorns, 6 sprigs fresh parsley, salt and freshly ground black pepper, to taste
Instructions: In 6-quart (6 l) slow cooker, combine all ingredients, except seasoning. Cover cooker and cook on low-heat setting for 6-8 hours. Turn off slow cooker. Strain turkey stock through a double layer of cheesecloth, discarding solids. Season stock to taste with salt and black pepper. Stir well, set aside and allow to cool. Instructions: In a slow cooker, combine all ingredients, except seasoning. Cover cooker and cook on high-heat setting for 4-6 hours. Turn off and open the slow cooker. Season to taste with salt and black pepper. Stir well. Ladle turkey soup into soup bowls. Serve hot.
Slow Cooker Turkey Noodle Soup Recipe
- 2½ quarts (2½ L) turkey stock
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped yellow onion
- 1 tablespoon minced garlic
- 3/4 teaspoon dried marjoram leaves
- 1 teaspoon dried thyme leaves
- 4 oz (120 g) egg noodles, cooked
- 4 cups cooked diced turkey
- 1 cup frozen peas, thawed and drained
- salt and freshly ground black pepper
In 6-quart (6 L) slow cooker, combine all ingredients, except cooked noodles, turkey, peas, and seasoning. Cover the cooker and cook on high-heat setting for 3-4 hours, adding noodles, turkey, and peas during last 15 minutes.
Turn off and open slow cooker. Season turkey soup with salt and black pepper. Stir well.
Ladle soup into soup bowls. Serve hot.
