Ingredients :

  • 4 pounds(1.700 kg) pork shoulder roast
  • 1/2-1 teaspoon ground ginger
  • salt and freshly ground black pepper,to taste
  • 2 cups mango salsa
  • 2 tablespoons honey
  • 1/4 cup apricot preserves
  • Hot cooked rice

Directions :

  1. Season pork shoulder roast with ground ginger,salt and black pepper.
  2. Place seasoned pork in 4-6 quart(4-6 L) slow cooker.
  3. Meanwhile,in a mixing bowl,combine mango salsa,honey and apricot preserves.
  4. Mix well and pour mango mixture over seasoned pork roast.
  5. Cover slow cooker and cook on low-heat setting for 6-8 hours.
  6. Turn slow cooker to high-heat setting and cook for 3-4 hours more or until roast is tender.
  7. Serve slow cooker mango ginger pork roast over hot cooked rice.
