Ingredients

  • ✔️ 1 po (480 g) boneless pork shoulder, cubed
  • ✔️ 1½ tablespoons soy sauce
  • ✔️ 1 teaspoon sesame oil
  • ✔️ 1/2 teaspoon kosher salt
  • ✔️ 1/2 teaspoon granulated garlic
  • ✔️ To Make a Sauce:
  • ✔️ 5 tablepoons ketchup
  • ✔️ 3 tablespoons honey
  • ✔️ 3 tablespoons rice vinegar
  • ✔️ 1 tablespoon sambal oelek
  • ✔️ 1 teaspoon kosher salt
  • ✔️ 1/2 teaspoon paprika
  • ✔️ 2/3 cup (160 ml) water
  • ✔️ 3/4 teaspoon cornstarch
  • ✔️ Add Ins:
  • ✔️ 1½ tablespoons vegetable oil
  • ✔️ 1/4 yellow onion, peeled and diced
  • ✔️ 1 cup pineapple chunks

Method

Step 1

In a large mixing bowl, combine pork chunks, soy sauce, sesame oil, 1/2 teaspoon kosher salt, and granulated garlic. Mix well and set aside.

Step 2

To Make a Sauce: In a medium mixing bowl, combine the ketchup, honey, vinegar, sambal oelek, salt, and paprika. Pour in most of the water, reserving 1-2 tablespoons. Mix all ingredients well. In a separated bowl, combine reserved water and cornstarch. Set aside.

Step 3

Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place marinated pork in the air fryer basket. Fry at 380 F (190 C), then flip the pork and cook for a further 2 minutes. for 3 minutes

Step 4

Heat the oil in a wok over high heat. Add onion and cook, stirring occasionally, for about 2 minutes. Remove cooked onion from the wok and set aside.

Step 5

Carefully pour the sauce into the wok and cook for 30 seconds. Stir the cornstarch slurry well and add to the wok. Mix well. Let the sauce bubble for 2-3 minutes.

Step 6

Use a spatula to mix in the cooked pork, vegetables, and pineapples after turning off the heat. Stir until everything is mixed together well.

Step 7

Transfer the sweet and sour pork to a serving bowl. Serve it over rice and with any vegetables, like my garlic green beans or smashed cucumber salad.
