Ingredients

  • 1/4 cup all-purpose flour
  • 1½ teaspoons lemon pepper seassoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/3 cup seasoned breadcrumbs
  • 1/3 cup Panko breadcrumbs
  • 2 large eggs, beaten
  • 3/4 pound large shrimp, tails-on
  • 1/3 cup coconut flakes

Method

Step 1

In a small mixing bowl, combine all-purpose flour and half of the seasoning. Sir well. In a separate bowl, combine breadcrumbs, coconut flakes, and remaining seasoning. Mix well.

Step 2

Preheat your air fryer to 400 F (200 C) for 5 minutes.

Step 3

Coat shrimp in the flour mixture, then dip in egg, and then into the breadcrumb mixture. Repeat with remaining shrimp.

Step 4

Grease the air fryer basket with nonstick cooking spray. Add breaded shrimp in a single layer o the greased basket. Fry at 400 F (200 C) for 4 minutes.

Step 5

Flip the shrimp over, spritz with cooking spray and cook for a further 4 minutes, or until they are crispy.
