Ingredients

  • 1/2 cup (125 ml) coconut oil
  • 2 oz (60 g) dark chocolate
  • 1 cup sugar
  • 2½ tablespoons water
  • 4 eggs, whisked
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon anise star
  • 1/4 teaspoon coconut extract
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon clear honey
  • 1/2 cup all-purpose flour
  • 1/2 cup desiccated coconut
  • shredded coconut, for garnish

Method

Step 1

In a microwave, melt the coconut oil and dark chocolate. In a large mixing bowl, combine melted chocolate mixture, sugar, water, whisked eggs, cinnamon, anise, honey, coconut extract, and vanilla. Mix well, then stir in all-purpose flour and desiccated coconut.

Step 2

Preheat your air fryer to 400 F (200 C) for 5 minutes. Grease the baking dish with unsalted butter. Transfer the choclate-coconut mixture to the greased dish.

Step 3

Put the dish in the air fryer. Bake at 355 F (180 C) for 15 minutes.

Step 4

Remove baked brownies from the fryer. Allow to cool. Slice it into squares. Sprinkle with shredded coconut before serving.
