Ingredients

  • 16 oz (480 g) sauerkraut, thoroughly drained
  • 1 cup cubed ham
  • 2 tablespoons whole-grain mustard
  • 3 oz (90 g) grated Jarslberg cheese
  • 3 large eggs, lightly beaten
  • 1 cup Panko breadcrumbs
  • For the Breading:
  • 1Β½ cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large eggs, beaten
  • 1Β½ cups Panko breadcrumbs

Method

Step 1

Place drained sauerkraut in a large bowl, then pound it with 7-8 ounces weight. Set it aside.

Step 2

Heat a little oil in a medium nonstick skillet over medium heat. Add cubed ham and cook until lightly browned, for 3- 4 minutes. Remove the skillet from the heat, but do not drain.

Step 3

Add cooled ham to the drained sauerkraut. Stir in mustard, breadcrumbs, and grated cheese. Add 3 beaten eggs and mix everything thoroughly. Cover the mixture and refrigerate for at least 3 hours, or overnight.

Step 4

Remove chilled mixture from the refrigerator. Using a 2-tablespoon cookie scoop, form the mixture into balls. Cover and refrigerate for 1 hour.

Step 5

To Bread the Sauerkraut Balls: In a small mixing bowl, combine all-purpose flour, salt, and black pepper. Mix well and set aside. Put beaten eggs and a separate bowl. In a third bowl, put breadcrumbs.

Step 6

Roll sauerkraut balls in the flour mixture first, shaking off excess then dip in beaten eggs, and roll in breadcrumbs. Place breaded balls in the air fryer basket. Fry at 380 F (190 C) for 11 minutes, turning them halfway through.
