Broiled Salmon Steak with Lemon Butter

Broiled salmon steak with lemon butter. Raw salmon steak broiled in a broiler and served with tasty lemon butter gravy.

Ingredients

  • 4 salmon steaks
  • salt and freshly ground black pepper
  • 1 tablespoon unsalted butter
  • For Lemon Butter:
  • 1/2 cup unsalted butter
  • 1/4 teaspoon finely grated lemon rind
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon chopped parsley
  • salt and freshly ground black pepper
  • cayenne pepper

Method

Step 1

Heat the broiler. Trim and wipe the steaks and rub with salt and pepper. Lightly brush the broiler rack with butter and place salmon steaks on it. Brush the tops of steaks with butter.

Step 2

Broil quickly far enough from the source of heat to cook without scorching. Turn the salmon steaks once,using a turner and spatula to avoid breaking the fish. Brush the second side with butter and broil until cooked.Do not overcook. The cooking time for broiled salmon steaks will depend on he thickness of steaks,but will about 5 minutes on each side.

Step 3

To make the lemon butter for broiled salmon steaks: Cream the butter and blend into the flavorings,taste,and adjust the flavor as preferred. Shape the lemon butter into a block or into pats and chill until ready to use.
