No-Bake Chocolate Peanut Butter Balls Recipe

Makes 3-4 dozen balls

Ingredients: 3 cups (750 ml) crushed rice cereal, 2 cups (500 ml) smooth peanut butter ( such as “Peter Pan”), 3/4 cup (180 ml) unsalted butter, softened, 3¾ cups (930 ml) powdered sugar, 1 pound (480 g) melting chocolate

Instructions: In a large mixing bowl, combine peanut butter and softened unsalted butter. Mix until smooth. Stir in crushed rice cereal and powdered sugar. Cover butter mixture and refrigerate for 1-2 hours.

Remove chilled peanut butter mixture from the refrigerator. Using a cooking scoop, make uniform balls. Roll into balls and set aside.

Place the melting chocolate in a microwave bowl and melt in a microwave oven. Dip peanut butter balls into melted chocolate, then remove, using toothpicks. Transfer to aluminum foil and allow cooling completely.

Store chocolate peanut butter balls in an airtight container at room temperature.

No-Bake Peanut Butter Truffle Balls Recipe

makes 3 dozen balls

Ingredients: 3/4 cup (180 ml) peanut butter, 1/4 cup (60 ml) unsalted butter, softened, 1½ cups (375 ml) toasted rice cereal, 1 cup (250 ml) powdered sugar, 1/2 cup (125 ml) semi-sweet chocolate chips, 1½ cups (375 ml) finely chopped peanuts

Instructions: In a large mixing bowl, combine peanut butter and softened butter. Using an immersion blender, blend until smooth. Stir in remaining ingredients, except chopped peanuts. Mix well.

Cover peanut butter mixture and refrigerate for 2 hours.

Remove chilled peanut butter mixture from the refrigerator. Shape dough into 1-inch (2.5 cm) balls, then roll in chopped nuts until well coated. Cover and refrigerate again for at least 2 hours before serving.

  • 1/4 cup (60 ml) peanut butter
  • 1/4 cup peanut flour
  • 1/4 cup (60 ml) clear honey
  • 2-3 tablespoons mini-chocolate chips
  • 1 teaspoon vanilla extract
  • sea salt

Method

Step 1

In a large mixing bowl, combine all ingredients. Mix until smooth.

Step 2

Shape the dough into 1-inch (2.5 cm) balls. Cover and refrigerate for at least 2 hours before serving.
