How to Wash Salad Greens

The importance of having perfectly crisped greens cannot be over-emphasized, for matter how perfect dressing is, it can be ruined by moisture. Remove the core from the head of lettuce, lay the head in a colander, and allow a slow flow of cold water to run into the cavity. This will gently loosen and separate the leaves. Carefully wash each leaf under cold running water. Shake free of excess water, then dry gently with clean paper towels.  Pack loosely in a clean, dry paper towel. And, finally, roll up tightly or place in an air-tight plastic container. Refrigerate to crispen.
