Lamb Kebabs (Shashlik) Recipe

Makes 6 servings

Ingredients: 4 pounds (1.9 kg) leg of lamb, 1 pound (480 g) small yellow onions, peeled, 1 green bell pepper, 3 sliced bacon, 6-12 button mushrooms, 6 small tomatoes, bay leaves, salt, and freshly ground black pepper, melted butter

Instructions: Cut the lamb into 1-inch (2.5 cm) cubes, Blanch peeled onions in boiling water; drain. Cut green bell pepper and bacon into 1-inch (2.5 cm) pieces. Thread the lamb onto 6 skewers alternately with onions, mushrooms, pepper, bacon, and tomatoes. Add a small bay leaf. Season with salt and black pepper. Brush with melted butter.

Broil gently, turning and brushing with oil if necessary, for 20-25 minutes, or until meat is cooked. Serve baked lamb kebabs over Rice Pilaf.

Rice Pilaf Recipe

Makes 6 servings

Ingredients: 2 tablespoons ghee or unsalted butter, ¼ cup (60 ml) vegetable oil, 1½ cups chopped scallions, 2¼ cups uncooked brown rice, 6¼ cups (1.56 L) chicken stock, 1 teaspoon salt, 1/2 teaspoon freshly cracked black pepper, 1/2 pound (240 g) Swiss cheese, sliced, 1½ cups grated Parmesan cheese, fresh parsley sprigs for garnish

Instructions: Heat the ghee or butter and oil in a large pan. Gently fry the scallions (green leaves included) until soft and golden. Add the washed and well-drained rice and fry, stirring, for about 8 minutes. Add the hot stock, salt, and black pepper. Stir, cover, and simmer over low heat for 1 hour. Transfer the cooked rice mixture to the buttered ovenproof dish.

Cover the top of the rice with slices of Swiss cheese, or with grated Parmesan cheese, and place under a hot broiler, or in 425º F (215º C) oven until the cheese melts and turns golden. Garnish with fresh parsley sprigs. Serve cooked rice hot.

Grilled Lamb Shish Kebab Sticks Recipe

Ingredients

  • 1 pound (480 g) lamb, cut into chunks
  • 2 yellow onions, peeled and chopped
  • 3 oz (90 g) chopped green onion
  • 1/2 pound (125 g) chopped tomatoes
  • half of lemon
  • 1 tablespoon vinegar
  • 1 tablespoon vegetable oil

Method

Step 1

In a large bowl, combine lamb chunks, onion, vinegar and 1 teaspoon of freshly squeezed lemon juice. Add seasoning and stir well. Cover bowl and leave it for2-3 hours in cool place.

Step 2

Thread marinated lamb pieces onto metal skewers, alternating with sliced onion. Fry lamb kebab on burning coals without flame, for about 15-20 minutes, turning skewers occasionally.

Step 3

Take off cooked kebab from skewers, put in a dish, pour the oil and garnish with green onions, sliced tomatoes, and slices of lemon. Serve lamb kebab with dry red wine, boiled rice and dried separately, ground barberries. Pour it with pomegranate juice.
