Grilled Mexican Burgers

Ingredients

  • 3 pounds (1.44 kg) boneless pork shoulder, cubed
  • 2 jalapenos, halved lengthwise, stems removed
  • 4 large garlic cloves, peeled
  • 1¼ teaspoons kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • corn tortillas, to serve

Method

Step 1

In an electric instant pot, combine cubed pork, jalapeños, garlic cloves, salt, oregano, black pepper, coriander, and cumin. Toss well.

Step 2

Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 35 minutes.

Step 3

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Using a slotted spoon, remove cooked pork from the cooker and transfer to a large bowl. Discard garlic and jalapeños.

Step 4

Using two forks, shred the meat. Pour cooking liquid over shredded pork and toss well.

Step 5

Working in batches, transfer shredded pork to a large nonstick skillet. Cook over high heat, stirring occasionally, until well browned, for about 5 minutes. Toss and continue cooking, tossing occasionally, until some edges are caramelized and crisp, for a further 5-7 minutes.

Step 6

Using a slotted spoon, transfer cooked mat to a paper-lined baking sheet. Serve with corn tortillas.
