Ingredients

  • 4 bell peppers, top removed, stemmed and deseeded
  • 1 pound (480 g) ground beef
  • 1/2 cup finely diced yellow onion
  • 8 oz (240 ml) can tomato sauce
  • 3/4 cup cooked Mexican rice
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1½ teaspoons chili powder
  • 1¼ cups shredded Colby Jack cheese, divided
  • kosher salt and freshly ground black pepper, to taste

Method

Step 1

In a microwavable bowl, combine tomato sauce and diced yellow onion. Stir well. Microwave for about 5 minutes, or until the onion is soft. Remove the tomato mixture from the microwave and set aside. Allow cooling.

Step 2

Pour 1/3 cup (80 ml) water into the bottom of an electric instant pot. Add a cooking rack and arrange bell peppers on it.

Step 3
