Yummy Wine-Braised Italian Sausage in the Instant Pot

Cooking Italian sausage in the Pressure Cooker is very easy. All you need is sausage and beer! This can come in handy if you want to cook a good amount of sausage in no time– even when you are on the go.

Add sausage and light beer to the Instant Pot. Be careful not to pour the wine over the sausage or it may explode! Italian sausages are ready to be eaten in just 15 minutes by following these steps: Close the lid, turn the valve to a sealing position, press the “Pressure Cook” or “Manual” button, and set the time for 15 minutes. When it’s done cooking, Quick Release the steam.

If you want to have your breakfast sausage browned, there are a few quick methods. First, sauté it in the Instant Pot on the “Saute” setting or using the broiler on your oven. You can also just eat it as is without any extra steps if you like 🙂

If you want to make more than one package of sausage at the same time, just place as much sausage in the pot as possible under the “Max Fill” line and then cook it!

Be careful to keep the wine in the same quantity when you prepare them. The sausages overlap and may stick together unpredictably, so a little more patience is required. The sausages are just as tasty — they maintain their taste even after sticking to each other — but this is something to be aware of if pre-searing sausage and then refrigerating it into a dish with other ingredients. Tasting the sausages on their own, they’re seasoned well, with a lightness to them. The overall taste is slightly smoky and earthy. One way to avoid your sausages from sticking to the pan is by separating them with a piece of foil.

Ingredients

  • 1 pound (480 g) mild Italian sausages
  • 2 tablespoons olive oil
  • 1½ cups (375 ml) dry red wine
  • 1½ cups (375 ml) beef broth
  • fresh rosemary sprig
  • 1/4 teaspoon red pepper flakes
  • salt and freshly ground black pepper, to taste
  • 2 bay leaves

Method

Step 1

Heat the oil in an electric instant pot turned to saute mode. Add the sausages and cook until lightly browned.

Step 2

Pour in the wine and deglaze the pot. Add beef broth, bay leaves, rosemary, and red pepper flakes.

Step 3

Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 15 minutes.

Step 4

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Discard rosemary and bay leaves. Using tongs, remove braised sausages and transfer them to a serving plate. Serve hot.
