Oven Baked Apple Cranberry Strudel

- 4 large apples,peeled,cored and sliced
- 1/2 cup dried cranberries
- 1/3 cup granulated sugar
- 1/4 cup chopped pecans
- 1 teaspoon grated lemon zest
- 1/2 teaspoon ground cinnamon
- 6 sheets phyllo pastry
- 1/4 cup butter,melted
- 1/3 cup dry bread crumbs
In a large mixing bowl,combine sliced apples,cranberries,sugar,pecans,lemon zest and ground cinnamon. Stir well and set aside.
Place a sheet of phyllo pastry on a flat surface. Lightly brush with melted butter and sprinkle with 1 tablespoon bread crumbs.
Place a second sheet of phyllo pastry on top of first. Brush with melted butter and sprinkle with bread crumbs. Continue to layer phyllo pastry,butter and bread crumbs.
Spoon apple mixture lengthwise along pastry about 2-inches(5 cm) from long edge. Roll up pastry to enclose apples.
Carefully arrange strudel,seam side down,on a foil-and-parchment lined baking sheet. Brush top of strudel with melted butter.
Preheat convection oven to 375°F (180°C).
Bake apple cranberry strudel in preheated oven for 35 minutes,or until apples are tender and pastry is golden.
Cool strudel in pan on wire rack. Serve warm.
