- 1 pound (480 g) ziti or another tubular pasta
- 15 oz (450 g) ricotta cheese
- 1½ cups shredded mozzarella(divided)
- 1/2 cup grated Parmesan cheese
- 1 large egg,beaten
- 3 cups fresh spinach
- 8 oz (240 g) fresh mushrooms,sliced
- 1 tablespoon olive oil
- 1 clove garlic,peeled and minced
- 4 cups (1 L) marinara sauce
Preheat the oven to 350°F (180°C).
In a large nonstick skillet,heat olive oil the add mushrooms and garlic. Cook,stirring,until mushrooms are tender.
Remove from the heat and stir in spinach,letting wilt from the remaining heat. Set aside and let to cool.
In a large pot,boil water. Cook pasta in boiled water,according cooking instructions(about 5-7 minutes).
In a mixing bowl,combine Parmesan cheese,ricotta cheese,1 cup of mozzarella cheese and beaten egg. Mix well and stir cheese mixture into cooled spinach mixture.
Drain cooked pasta and let it cool,the stir it into the cheese mixture as well.
In a casserole dish,layer the marinara sauce and pasta with cheese mixture,starting with marinara sauce on bottom. Top with half of pasta and cheese mixture the cover with another sauce mixture.
Layer with remaining half of pasta and cheese mixture . Cover with final layer of marinara sauce. Sprinkle with remaining mozzarella cheese.
Bake in preheated oven for 45 minutes.
