  • 4 pounds (1,9 kg) center-cut beef brisket

  • 1¼ teaspoon freshly ground black pepper
  • 2 tablespoons (30 ml) olive oil
  • 2 medium yellow onions, peeled and sliced
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 12 oz (360 ml) bottle hard cider
  • 1 cup (250 ml) apple juice

Method

Step 1

Trim the fat from the brisket and cut into quarters. Season with salt and black pepper.
