Pressure cooker barbecued baby back ribs recipe. Pork ribs with spices and tomato paste cooked in a 6-quart (6 L) pressure cooker. Very easy and tasty rib recipe. You can also cook ribs on a gas or charcoal grill. Please see below how to make it (recipe adapted from http://allrecipes.com)

Grilled Barbecued Baby Back Ribs Recipe

Ingredients: 1 tablespoon each: ground cumin, chili powder, paprika, 1 cup (250 ml) barbecue sauce, 3 pounds (1.44 kg) baby back pork ribs, salt, and freshly ground black pepper

Instructions: Preheat a gas grill to high heat or arrange charcoal briquettes on the charcoal grill. Lightly grease with oil the grate. In a small mixing bowl, combine all dry ingredients. Close the bowl with a lid and shake well.

Cut the ribs into sections. Sprinkle dry rub mixture onto both sides of the ribs. Line the lower rack of your gas or charcoal grill with aluminum foil. Arrange the ribs on the top rack of the grill (away from the coals if you are using the charcoal grill). Reduce gas heat to low, then close the lid and grill for 1 hour.

Open the lid and brush pork ribs with barbecue sauce. Close the lid and cook for a further 5 minutes. Using tongs, remove grilled ribs from the grill and transfer them to a serving platter. Serve hot with the extra sauce on the side.

Pressure Cooker Barbecued Baby Back Ribs Recipe

Ingredients

  • 1/4 cup (60 ml) canned tomato paste
  • 2 tablespoons cider vinegar
  • 1 tablespoon sweet paprika
  • 1/2 tablespoon coriander seeds
  • 1/2 tablespoon fennel seeds
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon celery seeds
  • 4 pounds (1.9 kg) rack baby back ribs, cut into 2-3 sections

Method

Step 1

In a pressure cooker, combine all ingredients, except ribs. Add 3/4 cup (180 ml) water and whisk until the tomato paste dissolves.

Step 2

Add pork ribs; toss to coat evenly with barbecue sauce.

Step 3

Close pressure cooker and lock the lid. Set the machine to cook at high pressure. Set timer to cook for 40 minutes. (32 minutes for stove top)

Step 4

Open the pressure cooker. Using tongs, remove cooked ribs from pressure cooker and transfer to a large rimmed baking sheet.

Step 5

Turn heat to medium-high if you are using stove pot, or set electric one to browning function. Bring sauce to a simmer. Cook, stirring occasionally, until the sauce has thickened, for about 3-5 minutes.

Step 6

Position the oven rack 4-6 inches (10-15 cm) from the broiler. Brush ribs with barbecue sauce. Broil until glazed and hot, for about 6-8 minutes, turning once. Serve barbecued ribs with the extra sauce on the side.
