To bake this bread in oven you need to use the following ingredients:

3 cups unbleached all-purpose flour, plus more for dusting

¼ cup light brown sugar

2 tablespoons sunflower seeds

2 tablespoons flax seeds

2 tablespoons pumpkin seeds

1 teaspoon sesame seeds

1 teaspoon poppy seeds

1 teaspoon fennel seeds

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cut into pieces

1 cup (250 ml) cold buttermilk

1 large egg

1 large egg yolk

Preheat oven to 400ºF(200ºC). Line baking sheet with parchment paper. In a large mixing bowl, combine all-purpose flour, sugar, seeds, baking powder soda, and salt. Mix well.

Add butter pieces and, using an immersion blender, on low speed, mix just until soft, thick crumbs are formed. Add 1 cup (250 ml) of buttermilk, the whole egg and egg yolk. Using immersion blender, mix on medium-low speed until dough forms rough and soft mass.

Transfer dough onto lightly floured work surface. Knead it gently, sprinkling with flour to prevent sticking, until dough just comes together and makes smooth surface (for 5-10 minutes).

Using a knife, divide dough into two equal portions. Knead each a few minutes to make a smooth round. Dust work surface with 2 tablespoons flour and roll the top surface of loaves in the flour. Place the loaves on prepare, parchment lined baking sheet. Using a sharp knife, slash the tops with a large X.

Bake in preheated oven until dark brown and crusty for 35-40 minutes or until toothpick inserted in the center of bread comes out clean.
