  • pinch saffron threads
  • 1/4 cup (60 ml) olive oil
  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander seeds
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 chicken drumsticks and 4 chicken thighs
  • 1/3 cup (80 g) chopped dried apricots ot dried papaya
  • 10 oz (300 ml) jar pitted olives, drained
  • 1 large lemon, sliced
  • 2 cups (500 ml) chicken broth
  • chopped parsley

Method

Step 1

In a pressure cooker, combine onion, garlic, parsley, cilantro, saffron, olive oil, and half of the spices. Stir well.

Step 2
