Ingredients

  • 2 tablespoons fresh rosemary leaves
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh oregano leaves
  • 1 teaspoon fennel seeds
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus extra for brushing the ribs
  • 1 tablespoon minced garlic
  • 1 teapoon freshly ground black pepper
  • 4 pounds (2 kg) baby back ribs, cut into sections
  • 1/3 cup (80 ml) red wine vinegar

Method

Step 1

Place herbs, fennel seeds, and salt on a cutting board. Finely mince them, using a large knife.

Step 2

Place minced herb mixture in a small bowl. Stir in 2 tablespoons olive oil, minced garlic, and black pepper.

Step 3

Rub pork ribs evenly with herb paste. Arrange seasoned ribs on a large plate, cover tightly, and refrigerate for at least 4 hours.

Step 4

Remove marinated ribs from the refrigerator. Place in a pressure cooker. Sprinkle vinegar over and around pork ribs without knocking off herb paste.

Step 5
