Instant Pot Hearty Sausage and Bean Cassoulet

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, peeled and sliced
  • 1 pound (480 g) turkey sausages, sliced
  • 2 teaspoons minced garlic
  • 2 tablespoons white wine vinegar
  • 3/4 cup (180 ml) low-fat chicken broth
  • 1 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound (480 g) white potatoes, cut into wedges
  • 1 large carrot, thinly sliced
  • 1/2 pound (240 g) small mushrooms

Method

Step 1

Heat the olive oil in a 6-quart (6 L) electric pressure turned to the browning function. Add sliced yellow onion and cook, stirring occasionally, until translucent, for about 2 minutes.

Step 2

Add sliced sausages, carrots, and mushrooms. Continue cooking, stirring occasionally, until browned, for a further 4-5 minutes. Stir in minced garlic, cook for about 15 minutes, then stir in the vinegar. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pot.

Step 3

Stir in the broth, basil, and season to taste with salt and black pepper. Toss well over the heat. Stir in potato wedges.

Step 4

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 15 minutes.

Step 5

Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Stir the stew before serving.

Step 6

Transfer turkey sausage and potato stew to serving plates. Serve hot.
