Slow Cooker Holiday Pork Roast Recipe

To prepare this easy and delicious pork recipe you need the following ingredients: pork tenderloin, chicken broth, Craisins, cornstarch, and cranberry juice:

Ingredients: 2½ pounds (1.44 kg) pork tenderloin, 3/4 teaspoon (4 ml) garlic powder, 1 cup (250 ml) Craisins, 1/2 cup (125 ml) nonfat chicken broth,  1/2 cup (125 ml) cranberry juice, divided, 2 tablespoons (30 ml) cornstarch

Instructions:  Lightly inside of 4-6-quart (4-6 L) slow cooker with nonstick cooking spray. Trim fat from the meat. Season pork loin with garlic powder and place in the greased pot. In a small mixing bowl, combine Craisins, chicken broth, and 1/4 cup (60 ml) cranberry juice. Mix well and pour cranberry mixture over seasoned pork loin.

Cover the cooker and cook on low-heat setting for 7-9 hours or until pork is tender.

Turn off the slow cooker and open the lid. Remove cooked meat from the pot and transfer to the serving platter. Cover with aluminum foil and keep warm. Pour juices from slow cooker into a medium saucepan.

In a small mixing bowl, combine the remaining cranberry juice with cornstarch. Mix until smooth. Add cranberry mixture to the saucepan and cook over medium-low heat, stirring constantly, until the sauce thickened and bubbly, for about 2-3 minutes.

Slice cooked pork loin. Pour cranberry sauce over and serve immediately.

Slow Cooker Cranberry Pork Loin Recipe

Ingredients

  • 3 pounds (1.44 kg) pork loin
  • 2 cans 14 oz (420 ml) each Whole Berry Cranberry Sauce
  • 1 package dry onion soup mix
  • 1/4 cup (60ml) melted unsalted butter

Method

Step 1

Place pork loin In 6-quart (6 L) slow cooker. Por the melted butter over the meat.

Step 2

In a small mixing bowl, combine 1 can cranberry sauce and onion soup dry mix. Mix well and pour over pork loin.

Step 3

Cover slow cooker and cook on low-heat setting for 6-7 hours or until pork is tender.

Step 4

Turn off the slow cooker and open the lid. Remove cooked pork loin from the cooker and transfer to a cutting board. Using two forks, shred the meat.

Step 5

Return shredded meat to the the pot. Miw well. Transfer to serving plates. Pour over remaining can of cranberry sauce. Serve over mashed potatoes or cooked rice.
