Ingredients

  • 3 boneless and skinless chicken breasts
  • 2 cups (500 ml) chicken broth
  • 3 cups (750 mi) regular milk
  • 8 oz (240 g) cream cheese
  • 1 cup (250 g) uncooked wild rice
  • half of yellow onion, peeled and diced
  • 2 teaspoons kosher salt
  • 2 teaspoons garlic powder
  • 1 teaspoon freshly ground black pepper
  • 1 celery stalk, chopped
  • 1 medium carrot, peeled and chopped

Method

Step 1

In a slow cooker, combine all ingredients. Mix well. Cover slow cooker and cook on low-heat setting for 5-6 hours.

Step 2

Using two forks, shred the cooked chicken. Stir well until cream cheese is combined with the liquid and the soup is thickened. Season with salt and black pepper, if needed.

Step 3
