Slow cooker easy chicken barley soup recipe. Very easy and delicious chicken, barley, and vegetable soup cooked in a slow cooker. Use the adlay barely (Chinese barley) for this recipe. You can find it in Asian stores. If you cannot find Chinese barley, substitute pearl barley for adlay.

Slow Cooker Easy Chicken Barley Soup Recipe

Ingredients

  • 1 yellow onion, peeled and diced
  • 1 garlic clove, peeled and minced
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 cup diced celery
  • 1 carrot, peeled and cubed
  • 1/2 cup adlay or pearl barley
  • 1½ pounds uncooked chicken breasts
  • 3½ cups (865 ml) chicken broth
  • 14 oz (420 ml) diced tomatoes, undrained
  • 3/4 teaspoon salt
  • 1 bay leaf
  • 1/4 teaspoon freshly ground black pepper

Method

Step 1

In a microwave-safe bowl, combine diced yellow onion, minced garlic, tomato paste, olive oil, dried basil, celery, and carrots. Stir well and microwave for about 4-5 minutes, stirring every minute.

Step 2

Remove cooked mixture from the microwave and transfer to a 6-quart (6 L) slow cooker. Add the remaining ingredients and stir well.

Step 3

Cover the pot and cook on low-heat setting for 4-6 hours or until barley is cooked through.

Step 4

Turn off the slow cooker and open the lid. Remove cooked chicken and transfer to a cutting board. Cut in bite-size. Return to the cooker. Stir chicken barley soup well before serving.

Step 5

Ladle the soup into soup bowls. Serve hot.
