Slow cooker easy traditional meatloaf recipe. Beef meatloaf with vegetables cooked in a slow cooker. Serve it with mashed potatoes. Meatloaf can also be cooked in a loaf pan or 2 smaller loaf pans if they fit in a slow cooker.

Real Mashed Potatoes Recipe

makes 6 servings

Ingredients: 2 pounds (960 g) Idaho potatoes, peeled, cooked, and kept warm, 1/3 cup (80 ml) each: 2% low-fat milk and sour cream, 2 tablespoons unsalted butter, salt and freshly ground black pepper to taste

Make the traditional meatloaf recipe, adding 1 oz (30 g) grated Parmesan cheese, 2 oz (60 g) shredded low-fat Mozzarella cheese, and 2 tablespoons chopped pitted ripe olives. At the end of cooking time, pour over tomato sauce or ketchup and sprinkle with 2 tablespoons each: of Parmesan and Mozzarella cheese. Cover slow cooker and cook until cheeses are melted, for about 5-10 minutes.

Savory Cheesy Meatloaf Recipe:

Make a traditional meatloaf recipe, submiting1/2 proud (240 g) ground lean pork for 1/2 pound (240 g) of the beef and stirring 4 oz (120 g) low-fat cream cheese, 2 oz (60 g)ย  shredded low-fat Cheddar cheese, and 2 tablespoons famous Worcestershire sauce. Finally, sprinkle 1 oz (30 g) shredded Cheddar cheese over top of the meatloaf. Cover slow cooker and cook on high heat setting until cheese is melted, for about 5-10 minutes.

Chutney-Peanut Meatloaf Recipe:

Slow Cooker Chicken Thighs

Ingredients

  • 1 ยฝ pounds (720 g) lean ground beef
  • 1 cup quick-cooking oats
  • 1/2 cup (125 ml) 2% low-fat milk
  • 1 large egg, beaten
  • 1/4 cup (60 ml) ketchup
  • 1/2 cup chopped yellow onion
  • 1/2 cup chopped green bell pepper
  • 1 teaspoon minced garlic
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt and 1.2 teaspoon freshly ground black pepper

Method

Step 1

Make foil handle, cutting 2 long strips of aluminum foil that will fit into the slow cooker, going across the bottom and extending to the top of the sides of the slow cooker.

Step 2

In a large mixing bowl, combine all ingredients. Mix until well blended. Pat the beef mixture into a loaf shape and place in the slow cooker (make sure sides of loaf don't touch cooker). Insert the meat thermometer in the center of the loaf.

Step 3

Cover the slow cooker and cook on low-heat setting for 6-7 hours or until meat thermometer registers 170 F (85 C). Turn off the slow cooker and remove the meatloaf, using foil handles.

Step 4

Loosely cover with aluminum foil and let stand for 10 minutes. Serve with mashed potatoes.
