Ingredients

  • 2 cups dry split peas, soaked overnight, drained and rinsed
  • 4 cups (1L) chicken broth
  • 1 cup diced ham
  • 1 cup diced carrots
  • 1 clove garlic, peeled and minced
  • 1 cup cubed yellow potatoes
  • 1 cup diced yellow onion
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • fresh parsley, for garnish

Method

Step 1

In a 6-quart (6 L) slow cooker, combine all ingredients, except fresh parsley. Stir well.

Step 2

Cover the pot and cook on a low-heat setting for 6-8 hours, or until peas are cooked.

Step 3

Turn off the cooker and open the lid. Stir the soup well. Remove 1-2 cups (250-500 ml) of soup and transfer it to a blender. Blend well, then stir the blended soup back into the slow cooker. Stir well to combine.

Step 4

Ladle the soup into soup bowls. Garnish with fresh parsley leaves. Serve hot.
