Slow Cooker Austrian Pork Stew with Apples and Cranberry Sauce

Cubed pork loin with whole-berry sauce, Worcestershire sauce, apples and herbs cooked in the slow cooker and served over cooked noodles. Very easy and tasty!

Makes 4 servings

Ingredients: 1 pound (480 g) boneless pork loin, cut into cubes, 16 oz (480 ml) can whole-berry cranberry sauce, 1 cup (250 ml) chopped yellow onion, 2 large tart apples, peeled, cored and thinly sliced, 1 tablespoon (15 ml) Worcestershire sauce, 1 tablespoon (15 ml) apple cider vinegar, 1 tablespoon (15 ml) brown sugar, 1/2 teaspoon (2½ ml) dried thyme leaves, salt and freshly ground black pepper,to taste, 8 oz (240 g) cooked egg noodles, warm

Instructions: In 6-quart (6 L) slow cooker, combine all ingredients, except salt, black pepper, and cooked noodles. Cover cooker and cook on low-heat setting for 6-8 hours.

Turn off slow cooker and open the lid. Season to taste with salt and black pepper. Stir well. Serve over cooked noodles.

Slow Cooker Hot Italian Sausages Recipe

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1/2 tablespoon minced garlic
  • 12 oz (360 ml) chili sauce
  • 12 oz (360 ml) grape jelly
  • 1/2 tablespoon crushed red pepper
  • 1/2 teaspoon cayenne pepper
  • 2 pounds (960 g) cooked sausages, chunked

Method

Step 1

In a small saucepan, heat olive oil over medium heat. Add minced garlic and saute for 30 seconds. Stir in chili sauce and grape jelly. Cook, stirring, for further 10 minutes. Stir in remaining spices and set aside.

Step 2

Place cooked sausages in the slow cooker. Pour spicy mixture over. Cover cooker and cook over high-heat setting for 1½-2 hours or until sausages are hot and sauce is bubbly, stirring after 1 hour.

Step 3

Turn off slow cooker and open the lid. Transfer cooked sausages to serving plate. Pour spicy sauce over and serve immediately.
