Slow Cooker Irish Spiced Beef Recipe

Ingredients

  • 1 tablespoon coarsely ground black pepper
  • 2 teaspoons ground ginger
  • 1 tablespoon crushed juniper berries
  • 1 tablespoon crushed coriander seeds
  • 1 teaspoon ground cloves
  • 1 tablespoon ground allspice
  • 3 tablespoons dark brown sugar
  • 2 bay leaves
  • 1 small yellow onion, peeled and finely chopped
  • 4 pounds (1.9 kg) corned beef
  • 1¼ cups (310 ml) Guiness beer
  • fruit chutney and bread, to serve

Method

Step 1

In a blender, combine black pepper, spices, and sugar. Blend thoroughly. Stir in bay leaves and finely chopped onion.

Step 2

Rub spice mixture into the meat, then put in a container. Close and refrigerate for 3-4 days, turning and rubbing with the mixture daily.

Step 3

Remove spiced beef from the refrigerator and transfer to slow cooker. Barely cover it with cold water. Cover slow cooker and cook on high heat setting for 3 hours.

Step 4

Reduce heat to low and cook for further 3-4 hours, or until meat is very tender, adding the beer during last hour.
