Ingredients

  • 2Β½ pounds (1.44 kg) boneless pork shoulder
  • freshly ground black pepper
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon fennel seeds
  • 2 cloves garlic, peeled and chopped
  • 1/2 teaspoon crashed red pepper flakes
  • 1 yellow onion, peeled and quartered
  • 1 tablespoon extra-virgin olive oil
  • sea salt

Method

Step 1

Place the pork in a large bowl and season generously with salt and black pepper. Scor the skin with a sharp knife about 1/8 inch deep, cutting in a diagonal criss-cross pattern about 1/2inch apart.

Step 2

In a food processor, combine all herbs and spices. Process until finely ground. Massage inside of the meat with the spicy mixture.

Step 3

Lay seasoned pork shoulder skin-side down, then roll the meat tightly and tie with butcher's string. Place onion quarters in a slow cooker. Top with rolled pork.

Step 4

Cover the pot and cook in a low-heat setting for 8-9 hours.

Step 5

Turn off the slow cooker and open the lid. Remove cooked pork from the cooker and transfer it to a cutting board. Drain excess, then pat it dry with paper towels.

Step 6

In a large nonstick skillet, heat the olive oil over medium-high heat. Add the pork and sear until crispy, for about 6 minutes, rotating halfway through.

Step 7

Remove seared meat from the cooker and transfer it to a cutting board. Remove butcher's string. Slice and enjoy!
